  • 1 (15 oz) can diced tomatoes (with juices)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion and garlic, sautéing until softened and fragrant.
  • Add the ground turkey to the pot, cooking until browned and fully cooked.
  • Stir in the diced bell pepper and cook for a few minutes until softened.
  • Add the pumpkin puree, diced tomatoes with their juices, black beans, and kidney beans. Mix well.
  • Pour in the chicken broth, then add chili powder, cumin, smoked paprika, cinnamon, cayenne pepper (if using), salt, and pepper.
  • Stir to combine all ingredients. Bring the chili to a simmer.
  • Reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes to allow the flavors to meld.
  • Adjust seasoning to taste before serving.
